The optimum conditions required to induce heat-shock response in Yersinia enterocolitica in brain heart infusion (BHI) broth is determined. Heat-shock protein production and an increase in cell thermotolerance Yersinia heat-shocked at ground pork when exposed to higher temperatures was also examined.
