The optimum conditions required to induce heat-shock response in Yersinia enterocolitica in brain heart infusion (BHI) broth is determined. Heat-shock protein production and an increase in cell thermotolerance Yersinia heat-shocked at ground pork when exposed to higher temperatures was also examined. The results showed that before heat shock can induce increased resistance in Y. enterocolitica in pork ground for higher heat treatment. The combination of an organic acid which is often used in the ready-to-eat to control the growth of Listeria monocytogenes during refrigerated storage.
